La Valentina is a family plantation of 15 acres, This Honduras coffee has handed down throughout generations. Located in central Honduras in the region of Marcala, in the town of San Pedro de Tutule. This plantation is over seen by Carlos Mejia whom employs locals who have tended the land their whole lives. The workers range from agricultural graduates to local field workers.
Harvesting period starts in January coming to an end in May. At this Honduras coffee farm the beans are hand picked while in their red cherry form, while in the afternoon with the benefit of the airs humidity de pulped. Once de-pulped they are fermented for 36 hours to acquire a touch of higher quality. Once washed, they are sun dried in large clear dome like structure to guarantee a controlled natural drying process.
